Vodka – Between Fire and Ice

伏特加誕生於冰雪之都俄國,無色純淨,酒體沒有味道偏向,酒精度卻異常濃烈(一般是40 度),它的凝冰點是攝氏-27℃,放在冰櫃不會凝固成冰。俄國人傳統喝法,是先把伏特加放在冰格急凍才大口灌下肚;冰極感覺首先滲入五臟六腑,酒精如火焰般的熾熱感由胃湧上喉頭,體內交感如冰與火譜出的協奏曲,炎夏呷一口,暑氣全消。
Created in the icy country of Russia, vodka, the colourless liquor, has a mild taste but a very high alcohol content (normally reaching 40% ABV). With a freezing point of -27°C, it remains in liquid form in the freezer. The Russian way of drinking vodka is first to cool it in the freezer and then down it. The temperature of the drink contrasts against the heat it induces in the body, making it a perfect drink to soothe the summer heat.


身價不斷提升

傳統伏特加都以“粗糧”如大麥、黑麥、土豆等釀製,蒸餾過程相當簡陋,味道單調。 但隨着蒸餾技術和過濾方法越加精進,伏特加的品質亦不斷提升;現在俄羅斯的頂級伏特加廠會通過增加蒸餾次數令酒體更純淨,裝瓶前還會經過木炭過濾去除酒中雜質。伏特加本是俄國及波蘭的國酒,到了上世紀30年代進入禁酒令剛解除的美國市場,經過分銷商將伏特加包裝成白威士忌,加上酒保廣泛將伏特加用來調配雞尾酒,讓伏特加風行美國。到了後來,瑞典、法國、德國、芬蘭、日本也開始釀造高質素的伏特加;近年中國亦加入“ 戰團”,著名的白酒公司水井坊糅合自家蒸餾技術及俄國的伏特加釀製技術,製作名為“ 海上幻”的伏特加,而伏特加的身價亦不斷提升,號稱最貴的羅索波羅的伏特加,索價就要130 萬美元一瓶!

Rising Value

Traditionally, vodka was made with grains such as barley, rye and potatoes. The distillation process was simple and taste of the drink tended to be unexciting. However, as distillation and filtering technologies improve, massive enhancement has been observed in vodka’s quality. Nowadays, top vodka makers would distil the liquor multiple times to refine the spirit. Before bottling, impurities would be removed by filtering the liquid with charcoal. Vodka is the national drink of Russia and Poland. The drink was little known to the American market when it was first introduced in 1934. And it only started to gain popularity when it was later marketed as “white whiskey” and widely used in cocktails. Sweden, France, Germany, Finland and Japan also started producing high-quality vodka. In recent years, China entered the stage, with baijiu producer Swellfun launching its own vodka Shanghai White. It combines the company’s distillation technology with the Russian vodka recipe. The price of vodka has been increasing, with the most expensive Russo-Baltique costing USD 1.3 million per bottle.

4) 薑 X 蜂蜜: 是蜂蜜味伏特加、新鮮薑絲、青檸雪葩及 檸檬味湯力水的結合 。 Ginger & Honey: Honey flavored vodka in combination with fresh ginger, lime sherbet and lemon tonic water.
5) 紅桑子 X 玫瑰: 由葡萄木槿香味的伏特加、新鮮紅桑子、 玫瑰糖漿及香檳雪葩調製而成。 Raspberry & Rose: Made from Red Grape Hibiscus Vodka, fresh raspberry, rose syrup and champagne sherbet.

千變萬化的基底酒

同時由於蒸釀技術的進步,讓以不同材料釀製的伏特加越來越能凸顯出不同的風味;如以大、小麥釀製則較為清淡, 葡萄釀制則充滿花香,黑麥的非常濃郁,馬鈴薯則口感幼滑,而玉米釀的則有濃列的奶油口感。誠然,伏特加除了傳統直接飲用外,也一向是雞尾酒其中一款常用的基底酒,與其他酒配搭後味道更顯千變萬化;位於香港富豪酒店的“ V Bar & Lounge ” 伏特加酒吧,提供超過110款不同的伏特加,喝法千變萬化,據酒吧經理古先生說,最受歡迎為一系列五款的伏特加通寧,以新鮮水果配上口感清新的雪葩,交織出層次豐富的口感。

A Versatile Base Liquor

With better distillation technology, different vodka flavours become more apparent. For example, vodka made with barley or wheat has a milder taste, while those made with grapes are more floral. Rye vodka has a richer taste, potato ones are smoother and maize ones are creamier. More than a naked shot, vodka is also a popular base liquor for cocktails. V Bar & Lounge at Regal Kowloon Hotel offers over 110 types of vodka, but according to the bar manager, the most popular drinks there are five vodka tonics from the “Not Just A Vodka Tonic” Collection. The spirit is mixed with fruits and sorbet, creating a complex texture.

說到伏特加,又怎能不提 詹姆斯.邦德在電影中常喝的“ 伏特加馬丁尼,搖勻,不是攪拌。”伏特加馬丁尼是來自電影系列《皇家賭場》中,邦德為騷擾敵人玩橋牌,向酒保點的一道酒。據說“ 搖勻,不是攪伴”是007原作者伊恩法蘭明的喜好,因他覺得攪拌會使酒的氣味掉散。V Bar & Lounge亦有提供這款007特飲,客人可自行挑選最愛伏特加及裝飾,如橄欖、酸蔥、檸檬皮等,再讓調酒師泡製出一杯獨一無二的“ 薇絲朋馬丁尼(Vesper Martini)”。

007’s Vesper Martini

Vesper martini – frequently featured in James Bond movies – is probably one of the best-known vodka cocktails. “Shaken, not stirred”, the drink was invented in “Casino Royale”, where Bond ordered a drink during a cards game to disturb his opponents. It is said that author Ian Fleming preferred his martinis shaken because he believed stirring would diminish the drink’s flavour. “V-signature” Vesper Martini Collection is offered at V Bar & Lounge, where customers could pick their own vodka and garnish, such as olives, pickles and lemon peels.
