Chef Tse and his professional team will select the best quality seasonal ingredients for the dishes. Double Boiled Fish Maw Soup with Silky Fowl and Dendrobium is cooked with the nutritious silky fowl, invaluable wild Dendrobium and fish maw, which is renowned for enhancing women’s skin and nourishing men’s liver and kidney. The popular Braised Bird Nest with Crab in Pumpkin Soup employs soup base with older chicken, lean red meat and pumpkin which suits with the crab meat and bird’s nest perfectly, providing a rich texture.

For spicy-food-lovers, one should not miss Braised Bean Curd with Scallop in Chili Sauce that integrates Chinese and Japanese food culture: the Hokkaido scallop is paired with more than ten types of Sichuan secret sauce. Sea Cucumber and Chicken Stew with Black Garlic is a healthy choice with the use of Korean black garlic and Kanto sea cucumber, which is rich in antioxidants and effective in strengthening body and beautifying skin. Moreover, two kinds of healthy soup are specially prepared by Chef Tse: Double Boiled Conch Soup with Dendrobium and Double Boiled Superior Bird Nest Stew with Almond Sauce.
