澳門氹仔百分百正宗葡菜

想吃正宗葡菜其實不用到葡萄牙本土,澳門也有極高水準的葡萄牙餐廳。像位於氹仔的Le Cesar,九成食材及調味料均由葡萄牙直接購入,而葡萄牙大廚Pedro 15歲便進入葡萄牙馬德廚藝學院學藝,這才是叫100﹪正宗! Pedro認為西葡兩國菜式的確近似,但葡菜會用得更多番茄及鱈魚如馬介休球。

極力推介燒章魚伴烤薯及葡式烤乳豬,章魚那種軟腍程度是筆者從來未吃過的,口感就像在吃龍蝦。據Pedro說,他把章魚放在水中,加上洋蔥及丁香先煮45分鐘,而後拿出來,以室溫讓它冷卻約一小時,吸收了洋蔥水就會變得軟腍。

葡式烤乳豬亦做得特別好,外皮香脆充滿油香,肉質軟腍多汁。原來秘訣又在於中間的冷卻程序:Pedro使用六個月大的乳豬,以豬膏、黑白胡椒等做的醬汁浸着,放入烤爐以低溫160度烤三小時,之後放在室溫一小時讓它盡吸醬汁,在奉客前才快烤一下,就能做到外脆內嫩。

 Authentic Portuguese Cuisine in Taipa, Macau

Macau houses many high-quality Portuguese restaurants. In particular,Le Cesar in Taipa imports most of its ingredients and spices from Portugal and makes extraordinary dishes out of them.Portuguese Chef Pedro Quintaneiro,who first received formal culinary training in Portugal at the age of 15, said although Spanish and Portuguese cuisines are similar, in general more tomatoes and codfish are used in Portuguese dishes.

Among the top recommendations are Grilled Octopus with Roast Potatoes and Roast Suckling Pig in Portuguese Style with Black Pepper Sauce, Potato Chips and Salad. The octopus was incredibly tender with a texture similar to lobsters. Pedro said to achieve the delicious texture, the octopus was first cooked in water with onion and cloves for 45 minutes, and then cooled down in room temperature for an hour. It is the absorption of onion juice that did the trick.

For Roast Suckling Pig in Portuguese Style, the skin was crispy and the meat was rich and succulent. The secret is the cooling process in-between: Use a 6-month-old pig seasoning with lard and pepper, set the temperature at 160°C and roast for 3 hours, then keep at room temperature for an hour to fully absorb the sauce.

 香港中環嚐加泰隆尼亞風味

近年西班牙菜風頭可說是一時無兩,其實要嚐高品質的西班牙菜亦不必飛到西班牙,坐擁無敵維港景色、在香港中環國際金融中心的La Rambla by Catalunya也是一個很好的選擇,行政主廚Ferran曾在多名米其林星級廚師門前學藝,對於加泰隆尼亞菜式更是料如指掌:La Rambla byCatalunya的餐單就是根據加泰隆尼亞飲食傳統而設計,包括一系列西班牙式小碟、肉類及海鮮菜式,以及一系列精緻的經典“ 大鑊”海鮮飯─當中高度推介以西班牙紅蝦入饌的海鮮飯;紅蝦之鮮味絕對是蝦類中的冠軍。

Ferran花了極大心思在西班牙小碟的創作中,因為它們最能代表西班牙菜,尤其是牛油果龍蝦卷及西班牙脆炸松露薯蓉球。“ 牛油果龍蝦卷以牛油果薄片包裹著新鮮龍蝦,我盡量不加任何調味料,希望能展現食材原有的鮮味。脆炸松露薯蓉球是以松露將此經典西班牙小食昇華,炸後上碟配以Brava醬汁及蒜蓉蛋黃醬,味道極之豐富!”筆者亦極愛這裡的法式半熟鵝肝包裹煙燻鰻魚,鵝肝與鰻魚味道出奇地匹配,味道濃郁口感幼滑。另外不得不試的還有傳統甜點、即點即炸的西班牙油條,一試就停不了口!

 Catalonian Falvours in Central, Hong Kong

Spanish cuisine has gained massive popularity in recent years. Rather than travelling to Spain, La Rambla by Catalunya in Central, Hong Kong,offers authentic Spanish food over the dazzling view of the Victoria Harbour,Executive Chef Ferran Tadeo has studied under multiple Michelin chefs and is famous for cooking Catalonian cuisine. The menu of La Rambla by Catalunya is inspired by the culinary traditions of Catalona, including tapas,dishes of meat and seafood, and a range of different paellas. For seafood lovers, do not miss Red Prawn Squid Ink Paella. The rich flavours of red prawns are exceptional.

As tapas are the most iconic Spanish food, Ferran has spent a lot of effort making them. Recommend his creation Avocado and Lobster and Truffle Bombas. “In Avocado and Lobster, fresh lobster meat is wrapped in thin slices of avocado. Seasoning is minimal so as to emphasise the original flavours of the ingredients. Bombas is a classic tapas dish, for my creation I have added the highly prized truffle. They are served with Brava sauce and garlic mayonnaise, presenting a rich mix of flavours.” I also like the restaurant’s Foie Gras and Eel Terrine. The two ingredients go surprisingly well with a rich flavour and a smooth texture. Another must-order dish is made-to-order Xurros. They are just irresistible.
