A Magic Potion – Gin Tonic

初春天氣最是悶人,這時來一杯以琴酒混合檸檬皮、冰塊和通寧水的琴通寧就最能沁人心肺。琴通寧發源於十九世紀印度,當時用以對抗瘧疾。在醫學發達的今天,大家已不會再以琴通寧來預防瘧疾,卻用之“治療”一眾酒徒嗜酒之苦……
Comprised of gin, lemon peel, ice and tonic water, gin tonic is a year-round drink but perfect for warm weather, it was originated in India in the 19th century to fight against malaria. Nowadays, it becomes a magic potion for drinkers.


千變萬化一琴酒

近年來,英國與西班牙掀起了一股琴通寧熱潮,及後更席捲全世界。在過去五年內,英國琴酒廠的數量翻了一倍,西班牙近年亦成為全球飲用琴酒第二高的國家。在港珠澳地區,專門喝琴酒的酒吧多如雨後春筍,位於香港中環置地廣場、亞洲50大最佳酒吧之一的“Dr. Fern’s Gin Parlour”,就擁有300 種琴酒供酒徒“ 朝聖”。酒吧經理陳智麟說,釀製琴酒除了必須的“基底”材料——杜松子外,其他配料可自由配搭,演變出千變萬化的口味,現時的琴酒更多達一千種,“很多人以為琴酒是歐洲獨有,其實東南亞國家,如我們酒吧亦供應以日本及香港生產的琴酒所製成的琴通寧。”

The Diverse Gin

In the past few years, gin tonic fever first heated up in the United Kingdom and Spain, and then spread around the world: the number of gin makers has doubled in the United Kingdom in last five years; the second highest level of gin consumption in the world can be found in Spain. Located in The Landmark, Central, Hong Kong, Dr. Fern’s Gin Parlour is one of Asia’s 50 best bars with over 300 types of gin. Bar Manager Paul Chan said besides the essential juniper berries, other ingredients can be freely matched to produce different tastes, hence there are thousands of gins on the market. “Many people think gin is only available in Europe, in fact, our bar also provides gin tonic made of the gin from southeast Asian countries, Japan and Hong Kong,” said Chan.

“G’Vine Floraison Gin”,是法國干邑區出品的琴酒,而“Floraison”是盛開之花的意思,所以這瓶琴酒有葡萄及花的味道,再加上草莓味的通寧水,女士會一喝愛上。
Produced in the French region of Cognac, G’Vine Floraison Gin features a hint of grapes and flowers. It is a perfect ladies’ drink when topped with strawberry-flavored tonic water.
比利時琴酒Blind Tiger,擁有肉桂、胡椒、迷迭香、橙皮及獨特 的香草味,與傳統果味重的琴酒味道很不同,有很重的香料味道。
The aroma of cinnamon, pepper, rosemary, orange peels, and herbs seep through this Belgium gin Blind Tiger, setting it apart from traditional gin, which normally has a heavier fruity taste.

必用柯林杯

百年發展下來,琴通寧無論是調製的材料比例以至使用的酒杯也極之講究。據陳智麟說,他們酒吧使用的,是英國傳統喝琴通寧用的柯林杯:“新派的西班牙琴通寧會使用類似葡萄酒杯的“汽球杯”,又或稱圓肚大杯,因為它方便飲者像品鑒葡萄酒一樣晃杯,再欣賞其散發的香氣。但要說到傳統,琴通寧一定使用12安士的柯林杯或高球杯,因杯子透明,高且直身,放入冰塊、加入琴酒及通寧水後,就最能發揮泡泡冉冉上升的優雅感覺,再加上不同形狀的冰塊、不同顏色的通寧水及食用花,一杯琴通寧就變成了可欣賞的藝術品。”

Served in Collins Glass

After a hundred years of development, gin tonic is particular about the proportion and even the glass used. According to Chan, Dr. Fern’s Gin Parlour uses Collins glasses, the English traditional glasses for gin tonic, “People may use balloon glasses, alias Copa glasses, for the new Spanish gin tonic as they can swirl the drink like wine to appreciate the aroma of the gin. But to be traditional, it should be served in a 12 oz collins or highball glass. Bubbles rise elegantly in the tall and straight body of the glass the moment when tonic water is added to the gin and ice. Adding different shapes of ice cubes, different colours of tonic water and edible flowers, a glass of gin tonic becomes a piece of art.”

Le Tribute from Barcelona is best complimented with tonic water produced by the same distillery. Lemongrass is used as the straw for this drink, adding a fun touch to it.

琴通寧品嘗二部曲

要認真品嚐每一杯琴通寧獨具匠心的風味特徵,不妨先在室溫下嗅聞並品嘗一小口未經稀釋的琴酒。由於琴酒味道濃郁,所以沒必要像品嘗葡萄酒那樣把酒含在嘴裡後吸氣,只需要將酒在口腔中轉上一圈再咽下,就能充分體會它的風味。高質素的琴酒植物香氣十分平衡,酒體複雜而且後勁持久。真正高品質的琴酒,在稀釋前應當口感順滑,吞下后會覺得胸中暖暖的,而不是在嘴里炸裂的感覺。

加入通寧水調配成琴通寧後再次品嘗,這時就要看看琴酒的植物香氣會否被通寧水中的奎寧苦味蓋過?唯兩者味道能夠平衡,才稱得上是一杯完美的琴通寧。

Tasting Gin Tonic in Two Steps

To properly appreciate the character of a gin tonic, first, take a small sip of neat gin in room temperature. As gin has a stronger taste, it only needs to be swirled around the palate before swallowing. It takes a shorter time than wine for the flavor to be released. High-quality gin has a balanced botanical aroma, complex body and lasting taste. Straight gin should be smooth and create a warm feeling in the chest when it is swallowed. On the contrary, low-quality gin is choking and tastes harsh on the palate.

Afterwards, add tonic water to the gin to see if the botanical hints are overpowered by the bitterness of the quinine. Only when the characters of the two are perfectly balanced could be called a good gin tonic.
